Dense, tangy, chewy and with a complex of flavours unique to long-fermented rye. It is more than a million miles from supermarket sliced white - so that’s all right then! There is no wheat flour in this recipe but with lots in the bakery we can’t guarantee that there will be no traces present - but it will only be a trace.

Wholewheat and sourdough breads have a low-GI. Low-GI foods keep you feeling full and energised for longer after eating and also encourage the body to burn fat.
